A few years ago my mom had these at her cousin’s house. We’ve both been making them ever since and they are delicious! They are kind of like a cookie dough ball but healthier and more filling. I’ve seen and tried lots of variations of these over the years but these ones have continued to be my favorite!

Energy Bites

1 cup Oatmeal

2/3 cup coconut

1/2 cup peanut butter

1/2 cup of flax seed or wheat germ

1/2 cup chocolate chips (I use semi-sweet or dark)

1/3 cup honey

1 Tbsp chia seeds

1 tsp vanilla

Mix together and roll into balls. If they aren’t sticking together I add a couple teaspoons of milk. Place in the freezer and eat whenever you need something sweet! It makes about 18 balls.

The kids also love them. I have to hide them when I make them so that they last longer than a day! 🙂
